EASY PEPPER & CHICKEN JALFREZI TRAYBAKE

Another simple mid week dinner. Just add your choice of veg and carbs. With tray bakes I tend to make them for Two nights

PROTEIN:

Chicken thigh, skin on, bone in

Plain yoghurt

VEGE:

3 x Red Peppers

Your choice of veg to serve

CARBS:

Your choice - I chose quinoa

FATS:

Jalfrezi curry paste

Onion marmalade

Olive oil

OTHER INGREDIENTS:

8 x cloves garlic

2 x Green chillies

8 x Bay leaves

METHOD:

Preheat oven (fan forced) to 180 degrees. Put a roasting tray on the hob on a medium heat. Season chicken with salt and pepper. Place in the tray skin side down with 1 thumb size olive oil. Peel the garlic, halve and deseed the chillies, scatter them into the tray . Tear the peppers into quarters, removing seeds and then add to the tray.

Turn the chicken once golden, add bay leaves, curry paste and onion marmalade, moving all around to coat. Let it sizzle away for 5 minutes, add 2 tablespoons of red wine vinegar & transfer to the oven for 45 minutes. Mash the soft garlic cloves then ripple through the yoghurt to serve.

Serve with your choice of veg and carb
