Nectarine Summer Salad

PROTEIN & FATS

Fetta Cheese ( P&F) 1-2 thumbs per person)

Lemon Olive Oil (F) 1 thumb per person)

CARBS

Nectarines - cupped handful per person

VEG

Baby spinach

Cucumber or grated raw zucchini

Fresh, chopped mint

Cherry Tomatoes

Grated raw Beetroot

EXTRAS

Salt and pepper

This has been my favourite salad this summer. Especially when members grow amazing nectarines and share them around.

You want to aim for about 2 fists of vege per meal. So keep this in mind when chopping the vege. Grate or chop them all, add them to the bowl. Salt and pepper them up and add the olive Oil. You could also use a squeeze of lemon and a drizzle of olive oil.

Up your protein by adding a side of meat, tofu, chic peas or eggs.
