LUNCH PREP DAHL

INGREDIENTS

2 x Onions - diced

2 x Garlic - crushed

Salt & pepper

2 x Teaspoons Curry Powder

2 x Teaspoons Turmeric

2 x Teaspoons Cumin

4 x Carrots - diced

2 x Zucchini - diced

2 x Tins light coconut milk

1kg Red lentils

Large bag spinach

METHOD

Fry oil, onions & garlic. Add powders and stir for 1 minute. Add a splash of water. Add diced veg. Sauté for 3 minutes. Add lentils, coconut milk, bring to boil and then reduce to simmer until cooked. Stir through spinach
